Sauté until vegetables have softened about 7 minutes. Boil water and cook pierogis according to package instructions.

Polish sausage recipes with onions and peppers. Warm oil in a large skillet over medium-high heat. Add peppers and onions to the skillet and continue to cook until vegetables are softened and sausage is cooked through. Slice peppers and onions into thin strips and sausage into ½ inch coins.
In a large skillet heat 1 tbsp of olive oil and cook sausage until it begins to brown. Add sausage and cook stirring frequently until lightly browned on both sides about 5 minutes. Taste and season with salt and pepper.
